The importance of water
As with all infusions, the flavor, aroma and color of a good yerba mate in tea bags will be affected by the water used. The water used to prepare it must be pure and fresh, from the tap. As it varies a lot depending on the region, if it is very chlorinated, filter water should be used, but never mineral water, as it contains sodium, potassium and other mineral salts that cause hardness and affect the quality of the infusion. It should be freshly boiled, because if it is boiled too much, the dissolved oxygen is eliminated, affecting the quality of the infusion and all the natural benefits it possesses.
